Chicken Fried Steak

Chicken fried steak is a staple in the south.  It can always be found on a buffet.  I love it, and while it's not something that should be eaten all the time, it is tasty and always makes me think of good times with friends and family.

Chicken Fried Steak:
(Alton Brown- Food Network)

Ingredients:
2-4 pieces of cubed steak
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 cup all-purpose flour
3 whole eggs, beaten
1/4 cup vegetable oil

Directions:

Preheat the oven to 250 degrees.

Cut the meat with the grain into 1/2-inch thick slices. Season each piece on both sides with the salt and pepper. Place the flour into a pie pan. Place the eggs into a separate pie pan. Dredge the meat on both sides in the flour, followed by the egg and finally in the flour again. Repeat with all the pieces of meat. Place the meat onto a plate and allow it to sit for 10 to 15 minutes before cooking.

Place enough of the vegetable oil to cover the bottom of a 12-inch slope-sided skillet and set over medium-high heat. Once the oil begins to shimmer, add the meat in batches, being careful not to overcrowd the pan.

Cook each piece on both sides until golden brown, approximately 4 minutes per side.

Remove the steaks to a wire rack set in a half sheet pan and place into the oven. Repeat until all of the meat is browned.

Chocolate Chip Cookies

I've heard great things about Alton Brown's chocolate chip cookies.  He has three versions: "The Chewy", "The Thin", and "The Puffy".  I have no interest in puffy or thin chocolate chip cookies so I obviously went with "The Chewy".

Alton Brown's "The Chewy":
from The Food Network

2 sticks unsalted butter
2 1/4 cups bread flour
1 teaspoon kosher salt
1 teaspoon baking soda
1/4 cup sugar
1 1/4 cups brown sugar
1 egg
1 egg yolk
2 tablespoons milk
1 1/2 teaspoons vanilla extract
2 cups semisweet chocolate chips

Heat oven to 375 degrees F.

Melt the butter in a heavy-bottom medium saucepan over low heat. Sift together the flour, salt, and baking soda and set aside.

Pour the melted butter in the mixer's work bowl. Add the sugar and brown sugar. Cream the butter and sugars on medium speed. Add the egg, yolk, 2 tablespoons milk and vanilla extract and mix until well combined.

Slowly incorporate the flour mixture until thoroughly combined. Stir in the chocolate chips.

Chill the dough, then scoop onto parchment-lined baking sheets, 6 cookies per sheet.

Bake for 14 minutes or until golden brown, checking the cookies after 5 minutes. Rotate the baking sheet for even browning.

Cool completely and store in an airtight container.

They tasted really good but I didn't love the texture.  They were puffier than I was looking for.  I brought them into work and everyone else loved them.
